Open-Faced Mediterranean Sandwiches

Ingredients & Directions

  • 1/4 cup hummus
  • 4 slices Pepperidge Farm® Whole Grain Small Slice 100% Whole Wheat Bread
  • 24 leaves baby spinach
  • 2 small cucumber, thinly sliced (about 3 cups)
  • 12 pitted ripe olives, sliced
  • 4 plum tomato, sliced
  • 1 dash ground black pepper
  • 1 teaspoon balsamic vinegar

Spread 1 tablespoon hummus on each bread slice.  Divide the spinach, cucumber, olives and tomatoes among the bread slices.  Season with the black pepper.  Drizzle with the vinegar.
